Coconut Granola


During the detox we removed all refined sugar. I thought this would be the hardest thing to do but because I could still eat honey, maple syrup and Zia's pie I was in the clear. One staple in our weekly routine pre-detox was Michelle's Granola. We ate two bags a week with whole milk. It is made with brown sugar so it was removed from the pantry for 30 some days. I needed an alternative and there was a great recipe in Kasia's manual that I adjusted a little bit. We are now cooking our own granola and enjoying the fresh, toasted goodness that welcomes us in the mornings.




Coconut Granola, adapted from Kasia Kines Whole Foods Detox Manual

cooking time: 20 minutes
preparation: 5 minutes


Dry Mix:

3 cups of rolled oats
1 cup of unsweetened coconut
1/2 cup raw Pepita
1/2 cup raw almonds partially crushed
1/2 cup sunflower seeds
1 tablespoon of Cinnamon 
Lemon peel of one lemon finely chopped
Toss together with your hands.
Wet Mix:
1 cup Organic Coconut Oil
2 tablespoons raw almond butter
1/2 cup raw honey
1/2 cup maple syrup (sometimes I use Agave or just add more honey and remove maple)
1/2 cup water
Mix in small bowl and toss with dry mix


Pre-heat the oven for 350. Spread out the wet mix evenly on a cookie pan. Add the Cinnamon to the top and then add a dash of Celtic Sea salt if you like a sweet and savory granola mix.




Set the timer for 10 minutes. Remove and toss in the pan after ten minutes. Set the timer for another ten minutes.





After twenty minutes the nuts will be golden and the coconut flakes will be toasted perfectly. Play with the recipe. You can add raisins or dates after the granola cools. If you want to add flax make sure it is ground and Kasia suggests that you keep it in the fridge so the nuts don't spoil. I'm a convert to unsweetened coconut milk and serving it over this coconut granola should be illegal!
